
Panna cotta
Panna cotta is a dessert that's become famous and well-known throughout the world. The classic panna cotta is flavored with vanilla and is incredibly versatile because it can be decorated in a thousand different ways, with chocolate sauces, caramel sauces, crumbles, fresh or cooked fruit, and more
The preparation is very simple and to make it vegan you can use different gelatins such as the famous agar agar, but this time we will use the Iota gelatin, much more pudding-like and creamy on the palate.
Today we'll be making a summer panna cotta. We'll make strawberry cream, and instead of cream, we'll use milk to make it lighter and less overpower the strawberry flavor. Finally, we'll finish the dessert with some strawberries cooked in a bain-marie and a mint leaf.
Procedure



Wash the fresh strawberries, remove the stem, and place them in a jug.
Blend until you obtain a puree, if you wish you can sieve it to remove the seeds.



Pour the puree into a saucepan and add the milk.
Separately, weigh the granulated sugar and Iota gelatin.



Mix the sugar and gelatin together, pour into the saucepan and stir with a whisk, blending if there are lumps.
Bring to a boil over low heat, stirring constantly with a whisk.



Transfer to a jug and blend with an immersion blender, holding it slightly tilted to remove the air.



Place the half-sphere mold on a rigid tray.
Pour the panna cotta into the mold, filling it to the edge.
Place in the refrigerator overnight to completely gel.



Wash the fresh strawberries, remove the stems, place them in a bowl, cover with cling film.
Place the bowl over a saucepan with water and cook in a bain-marie over low heat.
When the bowl heats up with the steam from the water, the film will stick better.
Then cook for about 1 hour, until the strawberries are soft.



After this time, open the film a little to let some steam escape and cook for another hour to thicken the liquid.
Then let it cool in the refrigerator until the following day when the panna cotta is ready.


Very gently, using a silicone spatula, remove the panna cotta (see video). Arrange a panna cotta on each plate and garnish with the cooked strawberries and juice. Serve immediately after adding the strawberries.
