Fig, peanuts and chocolate snack

Ingredients

  • 250 g dried figs
  • 150 g peanut butter 
  • 7 g freeze-dried raspberries in pieces 
  • 50 g pistachios 
  • A pinch of salt flakes
  • 250 g dark chocolate 

Chocolate and fruit snack

I created these snacks to use up leftover chocolate from Easter eggs 🍫

I wanted something simple, good but still a little “cleaner”: no added sugar, just dried fruit, nuts and dark chocolate.

They are soft, slightly chewy thanks to the figs, creamy from the peanut butter and with that crunchy chocolate coating on top.

Take a baking tray measuring approximately 24 x 18 cm and line it with baking paper.

Take the dried figs, remove the stalk and cut them in half.
We arrange them with the cut side facing upwards until the entire surface is covered.

We open them slightly with our fingers to create a more even base. Cover with another sheet of parchment paper and press lightly.

Then we roll out with a rolling pin until we obtain a compact and uniform layer.

Place back in the pan and remove the baking paper on top.

Now let's add the peanut butter. I use crunchy peanut butter so it adds a little texture.
We spread it well with a spatula, covering the entire surface.

Then we add freeze-dried raspberries for a little acidity and pistachios for the crunch.
And we finish with a pinch of flake salt, which enhances the flavor.

Now let's melt the dark chocolate, in the microwave or in a bain-marie.
It should be completely melted and smooth, without lumps.

We pour it on top and distribute it evenly, covering the entire surface well.

Place in the refrigerator for at least 30 minutes, until the chocolate has completely solidified.

When it's ready, take it out and turn it upside down onto a cutting board. Remove the parchment paper.

Using a long, sharp knife, cut into portions.
I divide the short side into 3 parts and the long side into 4, so I get 12 squares, but you can make them whatever size you prefer.

The snack is ready.

Storage

Store in a container in the refrigerator for up to 2 weeks.

Advice

I decided to use figs, but you can also make this snack with dates.
They are softer, therefore also easier to spread.
