Chocolate, but how good is it?

You don't have to give up chocolate, you know?

We have substitutes for some chocolates, some are already basically vegan, others are special, tasty, colorful, and I don't think you know them all.

Let's go and discover them.

Let's talk about the 3 basic chocolates: dark, milk, white.

Milk and white chocolate contain milk, so they're not vegan, and unfortunately we have to eliminate them. But wait, because there are alternatives.

Dark chocolate, on the other hand, does not contain milk, so it is basically already suitable for those who choose to follow a plant-based diet.

BUT, yes, there's a but, unfortunately, some companies play tricks and put powdered milk or anhydrous butter in dark chocolate, where it's absolutely unnecessary. So always check the labels.

And cocoa butter?

You'll find "cocoa butter" written on the labels. Is it butter? Does it contain milk? No, don't worry.

Cocoa butter is the fatty part of cocoa beans. It is very solid and oily, and is creamy white tending towards yellow in color, but does not contain milk.

Dark chocolate

As for dark chocolate, a chocolate that I use very often is Callebaut 54%.

Milk chocolate

As for milk chocolate, there is a vegan version and it is produced by the same company, Callebaut, and is called NXT Dairy free. 

To make this chocolate and make it as similar as possible to classic milk chocolate, chufa, a tuber, is used.

These tubers are dried and ground, becoming a creamy, fiber-rich replacement for traditional milk.

White chocolate

As for white chocolate, there are already some shops that sell soy or rice-based bars, often organic, natural shops.

A version I like, though it's more beige in color and has an almond flavor, is Valrhona's Amande chocolate. Unfortunately, it's only available in 3kg bags and is quite pricey, but it's worth it because it's so good. If you run a business, you might consider using it to showcase a vegan dessert with almond white chocolate.

Composition Amande:

  • 38% sugar
  • 30.5% minimum cocoa butter
  • 31% almond

Special fruit chocolates

Now let's move on to specialty chocolates. You can find fruit chocolates, which are vegan. They're made with cocoa butter, sugar, fruit, and lecithin. They're phenomenal, colorful, and delicious, but the color comes from the fruit itself; there are no added colorings. 

These Valrhona chocolates can be found in both small 250g packs and large 3kg ones.

This way you can taste them first and then decide whether to invest in the large pack.
