Chantilly
Chantilly is one of the pillars of pastry making. True Chantilly is French-style Chantilly and is made only of cream, icing sugar and vanilla, all whipped together. Today we will see it flavored with pistachio, therefore without vanilla, and without the addition of sugar since the vegetable cream is already sweetened.
The cream must be cold from the fridge to be whipped well, it is advisable to put the package in the fridge the day before.
Pistachio paste can be purchased or made at home, it is 100% pistachio paste, it does not contain any other ingredients. HERE I'll explain how to make it at home.

Method
Weigh the cold cream from the fridge into a bowl, add the pistachio paste.
Whip for several minutes with an electric whisk or in a planetary mixer at medium-high speed until the cream is well whipped, aerated and stable.
Transfer to a pastry bag, the tip used is a n11 closed star tip.
