Chantilly
Chantilly is one of the pillars of pastry making. True Chantilly is French Chantilly and is made simply with cream, powdered sugar, and vanilla, all whipped together. Today we'll see it flavored with pistachio, so without the vanilla, and without the added sugar since the non-dairy cream is already sweetened.
The cream must be cold from the refrigerator to be whipped well; it is advisable to place the container in the refrigerator the day before.
Pistachio paste can be purchased or made at home. It is 100% pistachio paste and contains no other ingredients. HERE I'll explain how to make it at home.

Procedure



Weigh the cold cream from the fridge into a bowl and add the pistachio paste.



Whip for several minutes with an electric whisk or in a stand mixer at medium-high speed until the cream is well whipped, aerated, and stable.



Transfer to a pastry bag, the tip used is a closed star tip n11.
Use for dessert or desired decoration. Like these cannoli, or to decorate tarts.
