Chocolate and coconut truffles

Ingredients

  • 125 g plain vegetable yogurt*
  • 22 g agave syrup*
  • 75 g dark chocolate 
  • 70 g dry biscuits (such as Digestive or Lotus)
  • 50 g coconut rape

Chocolate and coconut truffles

Truffles are small, ball-shaped treats that are eaten in one bite. They can be made in a thousand different ways; today we'll see how to make them with chocolate and coconut.

The day before preparing the truffles, drain the yogurt to remove some of the water and make it more compact. 

Then pour the yogurt into a cheesecloth, place it on a sieve over a pitcher, and refrigerate overnight. The next day, you'll find a little water in the pitcher and a thicker yogurt inside the cheesecloth.

Place the biscuits in a food processor and blend until finely chopped. 

In a bowl, melt the dark chocolate, add the syrup and the strained yogurt.

Mix well until you obtain a smooth mixture, add the biscuits and mix until you obtain a compact mixture.

Cover with cling film and place in the fridge for 1 hour.

Create 15 balls with your hands and place them on a baking tray lined with baking paper.

In a bowl, weigh the coconut and roll the balls inside to cover them all.

Then transfer the truffles to a container or place each one in a paper cup and on a tray and store in the refrigerator. 

Storage

Store in the refrigerator for 2-3 days.

Advice

*You can replace the strained yogurt with a spreadable cheese such as Valsoia, to reduce preparation time.

*You can use your favorite syrup, such as rice syrup or maple syrup.

To make this recipe I used Callebaut 54% dark chocolate.

To make these truffles gluten-free, use vegan and gluten-free dry biscuits.

    I love these truffles, I've made them so many times, this last one I tried a variation, I put a praline almond inside... in the photo I made some little gift packages for Christmas
