Banana Pancakes

Ingredients

  • 135 g banana mature (1 large)
  • 25 g dark brown sugar, such as muscovado
  • 1 g salt
  • 250 g plant based milk 
  • 25 g seed oil
  • 240 g all purpose flour (type 00)
  • 1 g baking powder
  • 3.5 g sodium bicarbonate

Pancakes

Banana pancakes are a healthier and tastier version of traditional American pancakes. They're perfect for Sunday breakfast, quick and easy to make.

In a bowl, mash the banana and sugar with a fork until you obtain a puree.

Add salt, milk, oil and mix. 

In a bowl, weigh and sift the flour, baking powder and bicarbonate.

Add the powders to the mixture and mix.

Heat a non-stick pan and melt a knob of margarine.
Using a spoon, pour a little batter into the pan.

When bubbles start to appear on the surface, turn them over with a spatula and brown the other side as well.

It will take about 4 minutes in total depending on the size of the pancakes.

Transfer them to a plate, they are now ready.

Storage

Store in the refrigerator for 2-3 days. 

For longer storage, store them in the freezer for up to a month in a plastic container and defrost them in the microwave or toaster whenever you want.

Advice

Serve them hot and sprinkled with icing sugar or maple syrup, or filled with jam or chocolate spread.
